I am entering that season of my life where I need to learn how to cook.
I don’t particularly enjoy cooking, but I know I need to learn, and I know that I could enjoy cooking if I start doing it enough and start choosing to believe that I will like it and look at it positively.
On top of that, I’m vegan, so most of what I learned how to cook along the way of my 21 years of living isn’t going to work anymore. So, without any further ado, today I made….. vegan pancakes w/ bananas and SmartBacon (vegan bacon)! And they were good!!!
Over at Broke-Ass Vegan, I discovered that you can make vegan pancakes super easily… helpfully, Bisquick is actually vegan. And for some reason, Bisquick says to add eggs when you just don’t need to. Broke-Ass Vegan (love the name by the way) thinks its just to make you feel like you actually are putting some work into cooking, because the recipe is simply:
2 cups bisquick
1 cup soy milk
After 6 pancakes and 8 pieces of SmartBacon, I’m plowed…
