Chile Cornmeal-Crusted Tofu Po’Boy

Yes, as promised, a report on my first cooking adventure back home.

I’m working out of Veganomicon right now. The Po’Boys were my first dish, and dare I say, they turned out bangin! For those who don’t know…

Po’Boy - 1. A wonderful, tasty, sub sandwich consisting of various types of meat(s) and condiments

Naturally my Po’Boys came sans meat. I busted out some bomb vegan coleslaw, got the chile cornmeal-crusted tofu fried up, threw on some pickle slices for good measure and wa la!

Tonight I’m making a homemade tomato soup, and I expect it to be fantastic :D
